Now that were’s into the biggest, blackest beer week of the year, I’m bringing in all of the events going on, including the ones that don’t have anything to do with big, barrel-aged beers. I’ll still need to confirm Thanksgiving hours on some of those regular Thursday events.
A major component of Chicago’s role as a center of the beer universe has been the Siebel Institute of Technology. The brewing school was founded in 1872, and among its hundreds of graduates have been many of the brewers and executives of both the major corporate brewers, and the recent craft beer scene.
On November 20, Siebel posted that they were relocating to Montreal, Canada, effective January 1, 2026. Siebel will be co-located with the Lallemand Baking Academy and Application Technology Training Facility, near the site of the original Molson brewery. The announcement cited a review of operating costs and industry trends, plus the increasing difficulties securing visas for foreign student.
This past January the local beer scene noted a joint venture between Steep Ravine Brewing and Moor’s Brewing. The venture was Diversey House, which had been the taproom for Steep Ravine when it was under the Ravinia Brewing name.
Now the Guys Drinking Beer blog has confirmed that Diversey House had closed down a few months ago. There has been no official confirmation from the principals about the closing and its causes, but city records for the location note that it is now “owned by the bank.”
