Time to acknowledge the Guys Drinking Beer blog as a source for the following news of new breweries:
May 3rd will see the debut of the Brutalist Brewing Cooperative, a new client brewer at Pilot Project Brewing, 2140 N. Milwaukee Ave. They describe themselves as “The city’s first worker-made, worker-owned brewing cooperative.” They’ll be hitting the floor with an American Lager and a Hazy IPA (labels in the header image).

They also note that a new brewer is taking over the brewing space at Peckish Pig in Evanston, which recently quit the brewpub side of its restaurant. Ekaloka Fermentory is the brainchild of Dr. Shobhana Panuganti and Dr. Ben Oxley, “Your local overeducated, ecofeminist, vegan brewers.” They expect to get into all sorts of vegan fermenting (yes, I know, beer is by its nature vegan): farmhouse styles fermented by local biota, using locally foraged ingredients where possible, along with ciders, kombucha, kimchi, and brined fermented vegetables. Their next event is a kimchi workshop April 24 with Eco Flamingo, 4750 N. Rockwell.

Finally, Black Lung Brewing or Round Lake Beach, which has already opened a brewpub in Fox Lake, has now announced a third location, coming soon in Grayslake. That location is the former Light the Lamp Brewery at 2 S. Lake Street, which closed last June.
